Preparation Method :
- Wash the chana dhal or split peas carefully and remove any stones.
- Put the pulses into a pan with enough water ,cover and boil for about 10-12 minutes until they are soft but not mushy. Drain and set to one side in a bowl.
- Slice the leeks thinly into rounds and rinse them to wash away any grit, then drain well.
- Heat the oil in a karahi, wok or deep pan. Lower the heat slightly and add the leeks, dried red chillies, curry leaves and mustard seeds. Stir-fry gently for 2 minutes.
- Add the mango powder, tomatoes, chilli powder, ground coriander, salt and chicken, and stir-fry for about 10 minutes.
- Mix in the cooked chana dhal or split peas and fry until the chicken is cooked right through.
- Garnish with fresh coriander and serve with immediately, from the pan.

- 1 teaspoon mustard seeds
- 2 teaspoon mango powder (amchur)
- 2 medium tomatoes, chopped
- ½ teaspoon chilli powder
- 1 teaspoon ground coriander
- Salt
- 500 grams skinless, boneless chicken, cubed
- 1 tablespoon chopped fresh coriander (cilantro)
