BALTI CHICKEN CURRY

Serves :

Preparation Time :
25 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat the oil in a large frying pan and add the cardamom pods, ground cloves and cumin seeds.
  • When it starts to splutter add the onion and chillies and fry for 2 minutes, stirring until the onions have softened.
  • Add the turmeric, paprika, ground coriander, salt and chicken pieces, fry over a high heat, stirring constantly until the chicken pieces turns golden.
  • Add the Evaporated Milk with a cup of water and simmer, uncovered, for 15 minutes.
  • Garnish with freshly chopped coriander and serve hot.

INGREDIENTS

  • 500 grams boneless, skinless chicken breasts, cubed
  • 75 ml IDHAYAM Sesame oil
  • 400 ml Evaporated Milk
  • ¼ teaspoon ground cloves
  • 2 teaspoons cumin seeds
  • 1 onion, grated
  • ½ teaspoon paprika
  • 2 fresh green chillies, deseeded and very finely chopped
  • 2 teaspoons cardamom pods
  • ½ teaspoon turmeric
  • 2 tablespoons ground coriander
  • Salt, to taste
  • Fresh coriander leaves, to garnish
