BALTI BUTTER CHICKEN

Preparation Method :

  • Put the yogurt into a bowl , then add the ground almonds, chilli powder, crushed bay leaves, ground cloves, cinnamon, garam masala, cardamoms, ginger and garlic.
  • Chop the tomatoes and add them to the bowl with the salt. Mix thoroughly.
  • Put the chicken into a large mixing bowl and pour over the yogurt mixture. Set aside.
  • Melt together the butter and oil in a karahi, wok or deep pan. Add the onions and fry for about 3 minutes.
  • Add the chicken mixture and stir- fry for at least 10 minutes.
  • Sprinkle over about half of the coriander and mix well.
  • Pour over the cream and stir in well. Heat through and serve, garnished with the remaining chop coriander and coriander sprigs.

INGREDIENTS

  • 150 ml natural (plain) yogurt
  • 50 grams ground almonds
  • 1½ teaspoon chilli powder
  • ¼ teaspoon crushed bay leaves
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon garam masala
  • 4 green cardamom pods
  • 1 teaspoon grated fresh root ginger
  • 1 teaspoon crushed garlic
  • 420 grams canned tomatoes
  • Salt
  • 1 kg skinless, boneless chicken, cubed
  • 75 grams butter
  • 1 tablespoon Cooking oil
  • 2 medium onions, sliced
  • 2 tablespoon chopped fresh coriander (cilantro)
  • 4 tablespoon single cream
  • Coriander sprigs, to garnish
