SPICY MEAT VINDALOO

Preparation Method :

Grind the spices into a pestle and mortar or spice grinder to a fine powder .
Transfer the powder into a bowl, add the salt, sugar and white wine vinegar and mix to a thin paste.
Heat 1 tablespoon of the oil in a large heavy pan and fry the onion for 5-7 minutes.
Put the onions and the spice mixture into a food processor or blender and process to a coarse paste.
Heat the remaining oil in the frying pan and fry the meat cubes until lightly browned. Remove with a slotted spoon.
Add the ginger and garlic to the oil remaining in the pan and fry for at least 2 minutes. Stir in the ground coriander and turmeric and fry for a further 2 minutes.
Add the spice and onion paste and fry for about 5-7 minutes.
Return the beef cubes to the pan with water. Cover and simmer until the meat is tender. Serve hot with plain and yellow rice.

INGREDIENTS

1 tablespoon cumin seeds
4 dried red chillies
1 teaspoon black peppercorns seeds from green cardamom pods
1 teaspoon fenugreek seeds
1 teaspoon black mustard seeds
½ teaspoon demerara sugar
50 ml white wine vinegar
40 ml IDHAYAM sesame oil
1 large onion, finely chopped
1 kg lean stewing beef, cut into small cubes
3 cm piece fresh root ginger, finely chopped
1 garlic clove, crushed
2 teaspoon ground coriander
½ teaspoon ground turmeric
Salt to taste
Plain and yellow rice, to serve
