BEEF VINDALOO

Preparation Method :

  • Grind the spices into a pestle and mortar or spice grinder to a fine powder .
  • Transfer the powder into a bowl, add the salt, sugar and white wine vinegar and mix to a thin paste.
  • Heat 1 tablespoon of the oil in a large heavy pan and fry the onion for 5-7 minutes.
  • Put the onions and the spice mixture into a food processor or blender and process to a coarse paste.
  • Heat the remaining oil in the frying pan and fry the meat cubes until lightly browned. Remove with a slotted spoon.
  • Add the ginger and garlic to the oil remaining in the pan and fry for at least 2 minutes. Stir in the ground coriander and turmeric and fry for a further 2 minutes.
  • Add the spice and onion paste and fry for about 5-7 minutes.
  • Return the beef cubes to the pan with water. Cover and simmer until the meat is tender. Serve hot with plain and pilau rice.

INGREDIENTS

  • 1 tablespoon cumin seeds
  • 4 dried red chillies
  • 1 teaspoon black peppercorns seeds from  green cardamom pods
  • 1 teaspoon fenugreek seeds
  • 1 teaspoon black mustard seeds
  • ½  teaspoon demerara sugar
  • 4 tablespoon white wine vinegar
  • 2 tablespoon Cooking oil
  • 1 large onion, finely chopped
  • 1 kg lean stewing beef, cut into small cubes
  • 3 cm  piece fresh root ginger, finely chopped
  • 1 garlic clove, crushed
  • 2 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • Salt  to taste  
  • Plain and pilau rice, to serve
