GARLIC AND CORIANDER NAAN

Preparation Method :
- In a smaller bowl, cream the yeast with the natural yogurt. Set aside for 15 minutes.
- Add the yeast mixture to the flour with the oil and add the chopped garlic, black onion seeds and chopped coriander, mixing to a soft dough.
- Tip out the dough on to a lightly floured surface and knead for about 10 -12 minutes until smooth.
- Palce it in a bowl and cover with plastic wrap and leave to rise in a warm place for 30 minutes or until the dough has doubled in bulk.
- Preheat the oven to 230°C/450°F/Gas 8. Place 3 heavy baking sheets in the oven to heat.
- Turn the dough out on to a lightly floured surface . Divide into 3 equal pieces ,into a ball.
- Cover two of the balls of dough with oiled clear film and roll out the third into a teardrop shape .
- Preheat the grill (broiler) to its highest setting.
- Meanwhile, place the naan on the hot baking sheets and bake until puffy.
- Remove the naan from the oven and place under the hot grill for a few seconds, or until the top of each naan browns slightly.
- Wrap the cooked naan in a dishtowel to keep hot,cook the remaining naan. Brush with oil and serve warm.

- 300 grams unbleached white bread flour
- 1 teaspoon salt
- 1 teaspoon dried yeast
- 60 ml natural (plain) yogurt
- 1 garlic clove, finely chopped
- 1 teaspoon black onion seeds
- 1 tablespoon fresh coriander (cilantro)
- 2 teaspoon clear honey
- 60 ml IDHAYAM sesame oil
