PUDINA KULCHA

Preparation Method :

  • Pour the curd with salt and sugar in the centre of the maida and sprinkle baking powder on it.Leave for a few seconds till it starts bubbling.
  • Meanwhile dissolve yeast in ¼ cup of warm water.
  • Add oil and the dissolved yeast. Knead with warm milk to a dough.
  • The dough should neither be too soft nor too stiff, brush the dough with oil. Keep in a warm place at least for 2 hours.
  • The dough swells. Knead it again. Keep it aside.
  • Take a bowl, Mix all the ingredients of the filling.
  • Make balls. Roll out to the desired size. Sprinkle filling all over and close it completely and press gently with the rolling pin.
  • Heat a flat bottom pan (tava). Put each kulcha, one at a time on the tava.
  • Cook the roti on one side till brown specs appear, then flip and cook on the other side.
  • Brush oil on both the sides if needed.Remove from the pan and serve hot.

INGREDIENTS

Dough

  • 250 grams maida
  • ¼ teaspoon dry yeast
  • ¼ teaspoon baking powder
  • 150 ml warm milk
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 ½ teaspoon Cooking oil
  • 1 tablespoon curd

Filling

  • 1 small bunch of mint leaves, choppped
  • ¾ teaspoon carom seeds
  • ¾ teaspoon salt
  • ¾ teaspoon red chilli powder
  • 1 big onion - very finely chopped
  • 2 tablespoon chopped coriander leaves
