NORTH KARNATAKA MASALA

Preparation Method :

  • Dry-roast, separately, coconut, til, urad, channa dal.
  • Roast all the remaining items except dhania separately, using a little oil each time.
  • Roast dhania till black spots appear, add chill powder and switch off the heat and let cool.
  • Grind all the roasted ingredients together to a coarse to fine powder.

INGREDIENTS

  • 150 grams Coriander
  • 3 tablespoon sesame seeds 
  • 1 tablespoon Channa dhal 
  • 1 tablespoon Urad dhal 
  • 150 grams cumin
  • ½ tablespoon fenugreek 
  • 2 tablespoon Grated dry coconut 
  • 3" Dalchini stick 
  • ¼ tablespoon Nut meg powder (Jaiphal Patri) 
  • 4-6 cloves 
  • 4 Cardamom (Velchi)
  • 6 star anise (Dagad phul) 
  • 2 Bay Leaf (Tamalpatra) 
  • ½ teaspoon Asafoetida
  • 6 Indian Capers (Maratha moggu) 
  • 1 tablespoon Chilli powder 
  • One fistful Curry leaves 
  • Salt to taste
  • Cooking oil
