Preparation Method :

  • Fry and remove onions and green chillies.
  • Fry the grated coconut a light brown over low flame, add the spice powders and cook a couple of minutes. Remove, dry grind to a fine coffee brown powder.
  • Meanwhile soak the tamarind in the water to make tamarind water. The moist piece when rubbed with fingers, in the water, will quickly dissolve.
  • Stir the sugar and a little salt into the tamarind water.
  • Stir in the ground paste and the curry leaves.
  • Return to the fire and cook uncovered till the oil separates and float on top of the gravy.
  • Optionally a few teaspoons of fried split cashews can be added as a garnish before serving.

INGREDIENTS

  • 200 grams Small onions
  • 5 Green chillies
  • 300 grams Grated coconut
  • 3 teaspoon Red Chilli powder
  • 2 teaspoon Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 sprig Curry leaves
  • 2 teaspoon Jaggery
  • Tamarind a small piece
  • 4 tablespoon Coconut Oil
  • Salt to taste
