SPINACH SOUP

Serves :

Preparation Time :
15 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Boil spinach in a little water until wilted. Puree and set aside.
  • Melt the butter in a saucepan.
  • Add peppercorns, garlic and flour. Cook for 3 minutes.
  • Add stock, milk, cream, spinach, white pepper and salt.
  • Whisk until smooth.
  • Cook uncovered for 30 minutes.
  • Strain before serving and garnish with a little fresh cream.

INGREDIENTS

  • 500 grams fresh spinach, washed
  • 250 ml vegetable stock
  • 2 garlic clove crushed
  • 2 teaspoon black peppercorns, whole
  • 25 grams butter
  • 25 grams plain flour
  • 200 ml milk
  • 5 tablespoon fresh cream
  • 1 teaspoon ground white pepper
  • Salt to taste
