CREAM OF TOMATO SOUP

Preparation Method :
- Skin the tomatoes, puree and set aside.
- Melt the butter in a saucepan; add peppercorns, flour and celery leaves.
- Cook for 3 minutes.
- Add stock and milk, mix well to make it smooth. Bring to boil and boil for 2 minutes.
- Add pureed tomatoes, cream, white pepper and salt.
- Cook tor l0 min on a low heat uncovered.
- Stir regularly.
- Strain before serving.
- Serve with croutons and some fresh cream.

- 750 grams fresh tomatoes
- 500 ml vegetable stock
- 25 grams plain flour
- 25 grams butter
- 2 teaspoon black peppercorns, whole
- 200 ml milk
- 5 sprigs celery leaves
- 5 tablespoon fresh cream
- 1 teaspoon ground white pepper
- Salt to taste
