CREAM OF FRESH GREEN PEA SOUP

Preparation Time :
15 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Cook peas. Puree and set aside.
  • Melt butter in a saucepan. Add peppercorns, leeks, crushed garlic cloves and flour.
  • Cook for 2 minutes stirring constantly.
  • Add stock, milk and cream, pureed peas, ground white pepper and salt.
  • Whisk until smooth Cook uncovered for 15 minutes. Stir regularly Strain before serving. Garnish with some fresh cream.

INGREDIENTS

  • 250 grams fresh green peas
  • 250ml vegetable stock
  • 4 garlic cloves, crushed
  • 2 teaspoon black peppercorns, whole
  • 1 teaspoon ground white pepper
  • 25 grams butter
  • 25 grams plain flour
  • 300 ml milk
  • 2 tablespoon leeks cut into small pieces
  • 5 tablespoon fresh cream
  • Salt to taste
