NADAN AADU SOUP

Preparation Time :
30 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Clean and break the mutton legs into small pieces.
  • Boil it with the ingredients for the soup, till the water is reduced.
  • Strain the soup and keep aside.
  • Saute the onion in ghee till golden brown in colour in a vessel big enough to hold the stock.
  • Add the flour and saute till flour is done.
  • Add coarsely powdered pepper and salt.
  • Pour in the stock and boil for few minutes.
  • Remove from fire.
  • Heat the oil and fry the shallots sliced fine till golden brown.
  • Add this to the soup just before serving.

INGREDIENTS

For the soup:

  • Goat legs of two Goats
  • 150 grams Onions, sliced
  • 8 nos Cloves
  • 4 pieces Cinnamon
  • 8 Pepper corns
  • 2 tablespoon Salt

For seasoning:

  • 200 grams Onions, chopped fine
  • 4 tablespoons sesame oil
  • 2 tablespoon Corn flour
  • 4 tablespoon Pepper powder

For garnishing
