MUTTON CURRY

Preparation Method :

  • Mix the mutton, ginger, vinegar, water, salt and cook in pressure cooker, transfer the contents into a pan.
  • Grease a skillet with coconut oil and broil dry chillies and coriander separately.
  • Grind chillies and coriander with dry chillies, coriander, pepper, aniseed, turmeric, cloves, cinnamon.
  • Heat oil in a deep pan and fry mustard and then the sliced onion, ginger, green chillies and curry leaves.
  • When sauted remove these. Add 1 teaspoon of oil more and add the masala mixed in a little water and brown over low heat.
  • Add 2 cups of the second extraction of coconut milk, 1 cup of meat stock, sauted ingredients, potato and garlic flakes.
  • Cover the pan and cook. When the potatoes are done mix the first extraction of coconut milk and vinegar and remove.

INGREDIENTS

  • 500 grams meat cut into cubes 
  • ½ teaspoon Ginger sliced thin and long 
  • 1 teaspoon Vinegar 
  • 100 ml Water 
  • Salt to taste 
  • 4 Dry chillies 
  • 1 teaspoon Coriander 
  • 10-12 Pepper 
  • 2 pinches Aniseed 
  • 1 small piece Turmeric 
  • 3 Cloves 
  • 1 piece Cinnamon 
  • 15 ml IDHAYAM sesame oil 
  • ¼ teaspoon Mustard 
  • 100 grams Onions sliced long 
  • ½ teaspoon Ginger sliced 
  • 4 Green chillies split 
  • 1 stalk Curry leaves 
  • 3 Potatoes (medium), cut into 12 pieces 
  • ½ teaspoon Garlic flakes 
  • 400 ml Coconut milk 
  • 1 teaspoon Vinegar
