KERALA MUTTON CURRY

Preparation Method :

  • Scrap out the fleshy part from half a coconut for grinding with spices. Set aside.
  • Scrap out the other half and blend it in a blender with two cups of warm water. Strain and reserve the coconut milk.
  • Grind together coconut, chillies, garlic and ginger and all the spices to make a smooth paste adding little water.
  • Heat oil in a stew pot and fry onions until brown.
  • Add the spice paste and fry for about 15 minutes in low heat, stirring in the 3 tablespoons of water in the process.
  • Add meat and sauté for 5 minutes over moderate heat.
  • Add tomatoes and sauté for another 5 minutes. Add salt to taste.
  • Add warm water and cook, covered, until meat is done. Then add the coconut milk and simmer for a few minutes before serving.

INGREDIENTS

  • 2 kilogram Mutton, washed and cubed into medium size pieces.
  • 15 whole and dried red chillies
  • 2 coconuts
  • 8 cloves of garlic
  • 5 teaspoon coriander powder
  • 1 inch piece of fresh ginger
  • 5 peppercorns
  • 4 cloves
  • 4 inch cinnamon stick
  • 2 teaspoon cumin seeds
  • 3 large onions chopped
  • 3 cinnamon leaves or bay leaves
  • 3 teaspoon poppy seeds             
  • 1 teaspoon fennel seeds             
  • 5 tablespoon sesame oil
  • 5 tomatos chopped
  • Salt to taste
