AADU STEW

Preparation Method :

  • Boil the potatoes and carrot and cut into pieces.
  • Heat the oil in a deep pan. Saute the cloves and cinnamon.
  • Add the crushed garlic and saute well.
  • Add the ginger, onions and chillies and saute till onions are pale in colour.
  • Remove some of this for garnishing. To the rest of the mixture add pepper powder and saute for a minute.
  • Add the mutton pieces and saute for 3 to 4 minutes or till the mutton becomes hot.
  • Add the milk and cook on medium heat for 15 to 20 minutes, till mutton is well cooked.
  • Pour in the milk and add the cooked vegetables.
  • Simmer for a while without letting it to boil.
  • Add corn flour diluted in a tablespoon of water to the stew.
  • Add the prepared garnishing to the stew just before removing it from fire.
  • Serve hot.

INGREDIENTS

  • 1 kg Mutton, cleaned and cut into cubes
  • 300 grams Onions, cut into round thick slices
  • 200 grams Potatoes
  • 150 grams Carrot
  • 20 grams Green chilly
  • 30 grams Ginger
  • 30 grams Garlic
  • 5 sprigs Curry leaves
  • 15 Cloves
  • 5 Cinnamon ¾ " pieces
  • 2 teaspoon Pepper powder
  • 1 litre coconut milk
  • 5 tablespoons Sesame Oil
  • 2 teaspoon Salt
  • 2 teaspoon Corn flour
