ROAST FISH

Preparation Method :

  • Grind the ingredients dry chillies, pepper, turmeric, garlic flakes, ginger, curry leaves using 15 ml vinegar and smear over the fish and marinate for at least ½ hour.
  • Heat a flat Aluminium skillet and saute the ingredients Onions, Ginger, Garlic.
  • Before the ingredients change colour add fish. Fry over medium heat turning from side to side frequently till the masala is roasted.
  • Meantime ladle the onion and other ingredients with the oil over the fish. Add coconut milk and tilt the pan around to mix the ingredients.
  • Let it boil on medium heat. When it boils briskly keep pouring the gravy over the fish. The fish may be turned over once more if needed. When the gravy thickens remove from fire.
  • Wilt a piece of plantain leaf and keep it in a wide and deep dish. Place the hot fish with gravy in it and serve.

INGREDIENTS

  • 500 grams Pomfret or similar fish cleaned and gashed whole 
  • 10 Dry chillies 
  • ⅛ teaspoon Pepper 
  • 1 small piece Turmeric 
  • 4 Garlic flakes 
  • 2 Small onions 
  • ½ teaspoon Ginger thinly sliced 
  • 1 stalk Curry leaves 
  • 1 dessert spoon Vinegar 
  • 50 ml Cooking oil 
  • 200 grams Onions sliced round 
  • ½ teaspoon Ginger sliced round 
  • ½ teaspoon Garlic 
  • 150 ml Milk extracted from 1 cup of grated coconut
