MEEN MANGA KOZHAMBU

Preparation Method :

  • Heat the oil in a pan; splutter mustard seeds, black gram, aniseed, cumin and fenugreek.
  • Add garlic and shallots and saute till they are brown.
  • Add tomatoes, turmeric, green chillies, coriander powder, red chilli powder, salt and saute till masala is cooked.
  • Add enough water along with coconut paste and mango cubes.
  • Add cubes of seer fish and cook on low heat till fish is almost done.
  • Finally add curry leaves, tamarind pulp, coriander leaves and check for seasoning.

INGREDIENTS

  • 750 grams Seer fish cut into medium pieces
  • 5 tablespoon sesame oil
  • 1 teaspoon cumin seeds
  • A pinch of mustard seeds
  • 1 teaspoon aniseed seeds
  • A pinch of black gram, split
  • A pinch of fenugreek
  • A handful of shallots chopped
  • 8 green chillies, crushed
  • 5 large tomatoes chopped
  • 4 tablespoon black tamarind extract
  • 4 teaspoon coriander powder
  • 5 teaspoon Red chilli powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coconut paste
  • 4 raw mango cubed
  • A sprig of curry leaves
  • A sprig of fresh coriander leaves
  • 4 cloves of garlic crushed
  • Salt to taste
