NEI PAYASAM

Preparation Method :

  • Clean and wash rice and cook in more than double the quantity of water. When the rice is cooked to a mashing consistency, add powdered jaggery and allow to melt.
  • After jaggery has melted completely, add grated coconut, half the quantity of ghee and stir.
  • Add the cardamom powder. Keep stirring and add ghee at intervals to avoid sticking to the bottom of the pan.
  • Cook till the mixture start to leave the sides and becomes saucy consistency. Don't overcook, since it will become a hard mass on cooling.
  • Take a small pan. Add ghee. Add pieces of coconut roast till it's brown. Remove the coconut and add cashews.
  • When they start browning, throw in the raisins. When the raisins puff up, remove from fire. Garnish payasam with roasted coconut, cashews and raisins.

INGREDIENTS

  • 150 grams raw rice
  • 300 grams jaggery
  • 100 grams ghee
  • 5 tablespoons grated coconut
  • 1 teaspoon cardamom powder

Garnish

  • 10 cashew nuts
  • 10 raisins
  • 10 raisins
  • 1 tablespoon coconut chips
