GREEN PEPPERCORN CHICKEN MASALA

Preparation Method :

  • Marinate the chicken pieces for 1 hour Meanwhile, prepare the masala.
  • Heat the oil in the saucepan, when hot add the mustard seeds and wait for them to crackle.
  • Add curry leaves, fresh green peppercorns and shallots. Saute for 2 minutes.
  • Add ginger and garlic paste, tomato and ground coriander. Add green peppercorn and coriander paste and water. Cook for 5 minutes.
  • Add chicken pieces and salt. Cook covered on a low heat for 30 minutes or until chicken is cooked. 

INGREDIENTS

  • 750 grams chicken, with or without bones, cut into medium size pieces

Marinade

  • 4 tablespoon natural yoghurt
  • 1 teaspoon ground turmeric
  • 2 teaspoon ginger paste
  • 2 teaspoon garlic paste
  • 2 tablespoon green peppercorn paste
  • 2 tablespoon coriander leaf paste
  • 1 teaspoon salt
  • 2 tablespoon coriander leaf paste
  • 1 teaspoon curry leaves
  • 1 teaspoon fresh green peppercorns
  • Salt to taste

Masala

  • 50 ml sesame oil
  • 2 teaspoon mustard seeds
  • 100 grams shallots finely chopped
  • 2 teaspoon ginger paste
  • 2 teaspoon garlic paste
  • 2 tomato small, finely chopped
  • 1 teaspoon ground coriander
  • 2 tablespoon green peppercorn paste
