VATTAYAPPAM

Preparation Method :

  • Wash and soak rice for 3 hours. Grind it to a coarse paste in a wet grinder.
  • Add coconut and cooked rice and grind it to a fine paste.
  • Boil 200 ml water and when it boils add the 4 tablespoon of coarse paste and stir well.
  • It will become a thick paste. Switch off flame and allow it to cool.
  • Add  4 tablespoon of this paste to the batter and grind it well.
  • Transfer the batter to a large bowl.
  • Add sugar and yeast to the batter and mix it well.
  • Allow it to ferment for 4 hours. When the batter has doubled, add sugar and cardamom powder and mix well.
  • Set it to ferment for 1 1/2 hours.
  • Heat ghee and fry cashew nut splits and raisins till golden brown.
  • When cool, add to the fermented batter and mix well.
  • Grease a cake tin and pour the batter should fill 3/4th of the tin.
  • Steam it for 30 minutes. Allow it to cool.
  • Invert it onto a plate and serve.

  • 100 grams Idli Rice
  • 100 grams Grated Coconut
  • 3 tablespoon Cooked Rice
  • 1 tablespoon Cashew
  • 1 tablespoon Raisins
  • 1 tablespoon Ghee
  • 1 teaspoon Instant Yeast
  • 3 teaspoon Sugar
  • 100 grams Sugar
  • 2 teaspoon Cardamom
