NEYYAPPAM

Preparation Method :

  • Soak raw rice in water for an hour. Wash and drain well.
  • Powder this in a blender to a coarse texture.
  • Mix the rice powder with sugar and knead well. Make it into a right mound.
  • Leave it overnight to mature.
  • Next day add the mashed plantain to this dough.
  • Add the coconut milk and salt to taste.
  • The mixture must be a thick batter, so that is can be dropped by hand.
  • Heat oil in a thick-bottomed pan.
  • Scoop small quantities of the batter with your hand and drop into the hot oil, like small balls.
  • Fry till it turns golden brown and crispy.
  • Remove from oil and place the neyyappam on a paper towel to allow the excess oil to get absorbed.

INGREDIENTS

  • 350 grams coarsely powdered rice flour  
  • 200 grams Sugar
  • 50 grams Plantain  
  • 100 ml Coconut milk  
  • Salt to taste
  • 500 ml Sesame Oil
