VEGETABLE CURRY

20 minutes

Preparation Method :

  • Heat the oil and fry the onions till soft.
  • Add the vegetables and fry for about 2-3 minutes. Put in tomatoes and coconut paste. Cook till the tomatoes and vegetables are almost cooked.
  • Add tamarind and water. When the vegetables are tender and gravy thick remove from fire and serve with steamed rice.

INGREDIENTS

  • 500 grams mixed vegetables, sliced
  • 3 tablespoon tamarind juice
  • 1 onion, minced
  • 2 tomatoes, sliced
  • Salt and chilli powder to taste

Spice Paste, ground

  • ½ coconut, grated
  • 75 grams mint  
  • 90 grams coriander leaves
  • 3-4 green chillies, chopped
  • ½ inch piece ginger
  • 2-3 flakes garlic
  • 1 teaspoon ground cumin seeds
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
