TENDER COCONUT & CASHEWNUT SUKHE

Preparation Method :

  • Heat the oil in a pan and sauté the spring onions till the colour changes.
  • Add the tomato and cook till soft.
  • Then add in the tender coconut and cashew nuts and saute for about 2 - 3 minutes.
  • Add the ginger garlic paste, turmeric, chilli, garam masala powder and one cup of water.
  • Cook till the water evaporates.
  • Add the salt and tomato ketchup and mix well.
  • Garnish with coriander leaves and serve hot.

INGREDIENTS

  • 420 grams Tender coconut kernel, into 2 inch strips
  • 3 cups Spring onions with leaves, finely chopped
  • 1 tablespoon Garam masala powder
  • 2 tablespoons Tomato ketchup
  • 2 tablespoons Coriander leaves, finely chopped
  • 50 grams large Tomatoes, finely chopped
  • 1 teaspoon Ginger garlic paste
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Chilli powder
  • 50 grams Cashew nuts, soaked
  • 75 ml Cooking oil
  • Salt to taste
