GNOCCHI DI PATATE EZUCCA

Preparation Method :

  • Mix the mashed potato with grated pumpkin and egg yolk. Add flour and mix to make dough.
  • Heat olive oil in a pan. Now add butter and garlic and saute.
  • In a container of boiling hot water blanch the dumplings.
  • Add the dumplings to the pan with the sauteed garlic. Toss it with shredded basil.
  • Garnish of fried basil leaves and grated parmesan.

INGREDIENTS

  • 100 grams Pumpkin, grated
  • 75 grams Flour    
  • 45 grams Butter    
  • 100 grams cooked and mashed Potato    
  • 2 Egg yolk        
  • 2 tablespoon Olive oil    
  • 2 tablespoon finely chopped Garlic
  • 3 tablespoon Parmesan cheese
  • A few sprigs Basil leaves
