COORGI VEGETABLE CURRY

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil in a skillet. Add sliced ginger, chopped onion and saute till the onions turn soft and translucent.
  • Add a dash of turmeric powder, chopped tomatoes and salt. Saute for few minutes till tomatoes become mushy.
  • Add green masala paste along with little water.
  • Add the vegetables and the the coorgi masala powder and cook till vegetables are tender then add the tamarind extract.
  • Let the curry simmer for a few more seconds and it is ready to be served.

INGREDIENTS

  • 300 grams cubed carrot
  • 200 grams cubed beans
  • 4 tablespoons green peas
  • 2 handful cauliflower florets cut small
  • 4 medium tomatoes chopped
  • 4 medium onions chopped
  • 2 long ginger sliced, thin and long
  • 2 tablespoon Tamarind extract
  • 5 teaspoons Coorg dry masala powder

Grind to a paste  

  • A small bunch of coriander leaves.
  • 5 green chillies
  • 1 portion of the above chopped onions
  • 2 teaspoon cumin seeds
