BITTERGOURD TREAT

Preparation Method :

  • Marinate the sliced bittergourd for about 10-12 hours. Wash them in plenty of water.
  • Heat the ghee and coconut oil and fry the onions till almond coloured.
  • Add in the ground paste, turmeric and salt, fry till a nice smell comes out of it.
  • Add prawns and cook till dry. Then put in the bittergourds with enough water to cover the prawns and gourds and cook till almost done.
  • Mix in jaggery and tamarind water, cook till done and the mixture turns quite thick. Serve hot garnished with coriander leaves.

INGREDIENTS

  • 550 grams prawns, cleaned and washed
  • 500 grams bittergourd, peeled and cut into thin rings, sprinkle with salt
  • 225 grams onions, finely sliced
  • 1 teaspoon turmeric powder
  • 1 tablespoon Ghee
  • 2 tablespoon coconut oil
  • 50 ml tamarind juice
  • 90 grams jaggery, finely grated
  • Salt to taste

Ground to Paste

  • 3-4 green chillies, minced
  • 1 inch piece ginger
  • 4-6 flakes garlic
  • 6 red chillies
  • 1 teaspoon cumin seeds
