TOBLERONE MOUSSE

Preparation Method :

  • Chocolate Truffle: In a double boiler melt dark chocolate. Add cream and stir till it forms a thick spreading consistency. Remove and cool.
  • Take water, sugar and liquid glucose in a sauce pan and boil it. Remove from the heat and allow it to cool. When warm, add in gelatine and mix.
  • Add in the chocolate and stir well till the chocolate melts, followed by the whipped cream and finally add in the roasted chopped almonds.
  • Pour on to a lined tray and refrigerate till set.
  • Remove the mousse from the fridge and put chocolate truffle on top and almond praline.
  • Garnish with mint leaf and serve cold.

INGREDIENTS

  • 750 grams Milk chocolate
  • 200 ml Water
  • 150 grams Sugar
  • 550 grams Whipped cream
  • 370 grams Almonds
  • 45 grams Liquid glucose
  • 2 tablespoon Gelatine
  • Chocolate Truffle
  • 100 grams Chocolate    
  • 75 grams Cream

Garnish

  • 15 grams Almond praline
  • Mint sprigs
  • Chocolate truffle
