SACHER TORTE

Preparation Method :

  • Grease a round cake tin and line with baking parchment.
  • Melt chocolate in a bowl over a pan of simmering water, then set aside.
  • Cream the butter and sugar until pale and fluffy, then add the egg yolks, one at a time, beating well after each addition.
  • Beat in the melted chocolate, then sift the flour over the mixture and fold in evenly. 
  • Whisk the egg whites until stiff in a grease free bowl, then stir about ¼ th of the whites in to the chocolate mixture to lighten it. Fold in remaining whites.
  • Tip the chocolate mixture into the prepared ring and smooth level.
  • Preheat the oven to 180°C / 350°F.
  • Bake for 40 - 45 minutes or until firm. Cool in and turn out on wire rack.
  • Filling: Heat the apricot jam with the lemon juice. Strain it. When the cake is cold, slice in half.
  • Brush the top and sides of each layer with apricot glaze, then sandwich them together.
  • Icing: Mix all the ingredients in a heavy pan.
  • Heat gently, stirring, until the mixture turns thick and smooth.
  • Pour the icing over the cake, cover the top and sides. Allow to set, garnish and serve.

INGREDIENTS

  • 225 grams Dark chocolate
  • 150 grams Butter
  • 125 grams Caster sugar
  • 8 Eggs
  • 110 grams Flour

Filling

  • 225 grams Apricot jam
  • 1 tablespoon Lemon juice

Icing

  • 220 grams Dark chocolate
  • 200 grams Castor sugar
  • 1 tablespoon Golden syrup
  • 250 ml Heavy cream
  • 1 teaspoon Vanilla essence
