PASTEIS DE SANTA CLARA

Preparation Method :

  • Filling: Put in nuts and egg yolks stirring all the time till the mixture turns thick. Add mashed potatoes.
  • Mix well and add the essence.               
  • Add 1 cup water to sugar and prepare a thick syrup.
  • Mix together flour, salt, butter with enough water to form a stiff dough.
  • Divide the dough into small balls. Roll out each ball into a thin round.
  • Place a portion of the filling on one-half of the round and fold over to form halfmoon shapes.
  • Seal and crimp the edges together. Deep fry to a golden colour and roll in icing sugar.

INGREDIENTS

  • 225 grams refined flour
  • 3 teaspoon butter
  • A pinch salt
  • Icing sugar, to taste

The Filling    

  • 150 grams sugar
  • 150 grams chopped cashewnuts
  • 150 grams potatoes, boiled, peeled and mashed
  • 6 egg yolks
  • ½ teaspoon almond essence
