KESARI KHEER

Preparation Method :

  • Boil milk in a pan and remove from heat.
  • Heat ghee, add the rice and fry in a pan, until it begins to colour for about 5 minutes.
  • Add the milk and bring to a boil stirring all the time. Simmer to low heat till the rice is cooked.
  • Then add sugar and continue to cook until reduced to custard consistency. Add raisins, cardamom and saffron milk. Stir for a minute.
  • Remove in a bowl add almond slivers and serve hot or cold in individual bowls and refrigerated.

INGREDIENTS

  • 100 grams Basmati rice, rinsed, soaked and drained
  • 2 tablespoon Ghee
  • 125 grams Sugar
  • 1 teaspoon Green cardamom powder
  • 1.5 litres Milk
  • 2 tablespoon Almonds, blanched and peeled
  • 2 tablespoon Raisins
  • 2 teaspoons Saffron dissolve in warm milk  
  • 2 tablespoon Milk
