GOAN BAATH CAKE

Preparation Method :

  • Sift the flour together with baking powder and salt. Cream the butter and sugar together.
  • Add the yolks to the creamed mixture one at a time, beating thoroughly. Beat the whites till they stand up in stiff peaks.
  • Add to the mixture alternatively with flour mixture beating thoroughly. Mix in the coconut and essence and set aside whole night.
  • Put in a little milk to soften, if the mixture stiff. Put the mixture in well-greased and flat baking tins and level out the surface.
  • Mix flour and butter with enough water to form a soft dough.
  • Roll out the dough into a not too thin round and then cut into 1- inch thick long strips. Roll each strip into a tight roll lengthwise.
  • Arrange the strips of rolled strips on top of each baath in lattice work.
  • Bake in a moderate oven for about 20-22 minutes or until a knife inserted in the centre comes out clean.

INGREDIENTS

  • 2 coconuts, scraped and ground to smooth paste
  • 225 grams butter
  • 550 grams semolina
  • 500 grams powdered sugar
  • 6 big eggs, separated
  • 1 teaspoon baking powder
  • 1 teaspoon of rose essence
  • A pinch of salt

For Pastry    

  • 150 grams refined flour
  • 1 tablespoon butter
