DRESDEN STOLLEN

Preparation Method :

  • In a saucepan, heat the milk and the butter until the butter melts.
  • Mix in the salt, orange zest with the melted butter mixture. Set it aside.
  • Cool the mixture to lukewarm. Beat in eggs and yeast. Add enough flour to make soft dough. Mix the fruits and broken nuts to the dough and knead until smooth.
  • Place in a greased bowl, turn once to grease coat the top. Cover and place in a warm spot to rise until doubled.
  • Turn out onto a lightly floured surface, divide dough into 8 equal parts.
  • Roll each piece into an oval shape. Brush with melted butter.
  • Cover lightly with butter paper, and place in a warm spot until doubled in bulk.
  • Bake at 180°C / 350°F, for about 20 - 30 minutes.

  • 1 kg Flour    
  • 450 grams Mixed soaked fruits
  • 175 grams Unsalted butter    
  • 2 tablespoon Orange zest
  • 2 tablespoon Yeast    
  • 145 grams Castor sugar
  • 550 ml Milk        
  • 2 Eggs    
  • Salt to taste    
  • Almond, Raisins, Currant and Prunes
