COCONUT CHERRY ROULADE

Makes :
12 slices

Preparation Time :
45 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Chocolate Roulade : Cream egg yolk and sugar till fluffy.
  • Whisk egg whites and sugar to make a meringue. Fold in the egg yolk and sugar mixture into this. Fold in the flour.
  • Using a piping bag, pipe the batter very closely and flat onto a baking tray.
  • Bake at 250°C for 10 minutes till it springs on touch. Remove and cool.
  • Coconut Filling: Boil the coconut milk with sugar. Add in the gelatin and cool on ice. Stir in the cream.
  • Spread the coconut mix on the chocolate roulade and sprinkle black cherries on top.
  • Roll the roulade into a tight roll and cut into slices and serve.

INGREDIENTS

Chocolate Roulade

  • 450 grams Flour
  • 75 grams Cocao powder
  • 700 grams Egg yolks
  • 345 grams Sugar
  • 1 kg Egg whites

Filling

  • 220 grams Sugar    
  • 110 grams Black cherries
  • 150 ml Coconut milk    
  • 150 ml Whipping cream    
  • 1 teaspoon Gelatin
