BREAD AND BUTTER PUDDING

Preparation Method :

  • Whisk egg yolk and caster sugar.
  • Pour the boiling milk slowly into the egg yolk mixture stirring and combine well. Pass through a strainer.
  • Remove the crusts from the sides of sliced bread. Cut in rectangles.
  • Bring the milk to boil. Add vanilla essence.
  • Place a rectangle layer of bread at the base of the baking dish. Sprinkle some rum soaked raisins on top. Top it with a layer of milk custard.
  • Add another layer of bread and raisins and repeat the process till the dish is full.
  • Cook the pudding in a warm oven 160°C / 320°F for about 15 - 20 minutes or until custard is set.
  • Allow it to cool and turn it on a plate upside down.
  • Sprinkle with a spoon of demarara sugar.

INGREDIENTS

  • 100 grams Demarara sugar    
  • 500 ml Milk    
  • 4 Eggs    
  • 75 grams Castor sugar    
  • ½ teaspoon Vanilla essence    
  • ½ loaf White bread, sliced   
  • 50 grams Raisins soaked in rum
