BOLO GOSTOSO

Preparation Method :

  • Add sugar, butter and cardamoms over a slow fire and cook till the mixture turns into a syrup.
  • Cool slightly and mix in semolina, nuts and essence. Set aside for an hour.
  • Beat the yolks and mix in along with wine. Then fold in the stiffly beaten egg whites.
  • Grease and flour a shallow baking tray, put in the mixture and arrange nuts on top. Bake to a light golden colour.

INGREDIENTS

  • 550 grams sugar
  • 550 grams semolina
  • 50 grams butter
  • 1 teaspoon cardamom seeds
  • 50 ml wine
  • 75 grams mixed sliced nuts like cashewnuts, almonds and raisins
  • 1-1½ coconut, ground to paste
  • 6 eggs, separated
  • 1 teaspoon vanilla essence
