BANANA PUFFS

Preparation Method :

  • Filling: Mix in the coconut and spices with the mashed bananas.
  • Mix together flour, salt with baking soda and butter. Add enough buttermilk to form a stiff dough.
  • Shape the dough into a ball and roll out into a thin sheet on a floured board. Cut into small rounds.
  • Place spoonfuls of banana mixture in the centre of half of the rounds.
  • Cover each filled dough round with the remaining rounds and seal the edges together.
  • Deep fry the puff to a golden colour. Drain and dust with icing sugar.

INGREDIENTS

  • 150 grams refined flour
  • 1 tablespoon melted butter
  • ¼ teaspoon baking soda
  • Buttermilk
  • 2 ripe bananas, peeled and mashed
  • 2 tablespoons grated coconut
  • ¼ teaspoon grated nutmeg
  • ¼ teaspoon ground cardamoms
  • Pinch of salt
  • Icing sugar
