CHICKEN LIVER PATE

Serves :

Preparation Time :
45 minutes

Cooking Time :
25 minutes

Preparation Method :

  • Coarsely chop chicken liver and ham. Finely chop the shallots. Chop parsley.
  • Heat the pan and brown the shallots in a little butter.
  • Take a pan, add oil and then the chopped chicken liver and ham. Fry the mixture stirring all the time.
  • Add the basil leaves, salt and freshly ground pepper. Leave the mixture to simmer in the brandy for about 2 minutes.
  • Put the mixture in the blender and puree. The parsley is added during the blending process.
  • When the mixture is still warm, add in the butter and mix well.
  • Put into a mould and allow cooling.
  • Prepare the aspic and pour over the liver mixture.
  • When the aspic has set, decorate the top with carrot stars, gherkins etc.

INGREDIENTS

  • 350 grams Chicken liver
  • 300 grams Ham 
  • 250 grams Butter
  • 2 bunches Parsley
  • 4 Shallots
  • Fresh basil leaves
  • 100 ml Brandy
  • 250 grams Aspic
  • Salt and pepper to taste
