ONION-PEPPER SOUP

Preparation Method :

  • Heat the oil in a pan and add in the cumin and coriander seeds. When they splutter, add in the onions and gently simmer till they are golden.
  • Add in the fresh chillies, tomatoes and about a litre of water and simmer for about 10-15 minutes.
  • Add in the tamarind juice with ginger, peppercorns, sugar and salt and simmer till the tomatoes turn pulpy.
  • Taste and adjust the seasoning. Remove from the heat, stir in the coriander leaves and serve hot.

INGREDIENTS

  • 500 grams Chopped onions
  • 50 grams Chopped tomatoes
  • 2 tablespoon Tamarind juice
  • 1 tablespoon Shredded ginger
  • 1 tablespoon Cooking oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Lightly crushed coriander seeds
  • 2-3 Chopped fresh chillies  
  • 2 tablespoon Crushed black peppercorns
  • 1 tablespoon Chopped coriander leaves   
  • A pinch Sugar
  • Salt to taste
