CURRIED PAPAYA SOUP WITH COCONUT MILK

Preparation Method :

  • Heat the ghee in a heavy bottomed pan and drop in the fennel seeds and cinnamon. When the seeds start to change colour, add the papaya, ginger, chillies and turmeric and stir.
  • Stir in a cup of water and simmer for 10 minutes or until the papaya is soft.
  • Add the coconut milk and salt and simmer for 15-20 minutes or until the coconut milk starts to thicken.
  • Mash half of the papaya roughly and increase the heat. Boil the soup rapidly for a minute, taste and adjust seasonings.
  • Remove from the heat, stir in the nutmeg with mint and serve hot.

INGREDIENTS

  • 750 ml thick coconut milk  
  • 500 grams Peeled and diced papaya
  • 1 tablespoon Ghee
  • 2 tablespoon Chopped ginger
  • 2 tablespoon Chopped fresh chillies  
  • 1 teaspoon Grated nutmeg
  • 1½ teaspoon Turmeric powder
  • A pinch Fennel seeds
  • 1 Cinnamon stick
  • Salt to taste
  • 2 teaspoon Chopped mint leaves
