FRIED BRAIN

Preparation Method :

  • Apply chutney on the brain, roll in crumbs, dip in egg and roll once again in crumbs. Shallow fry to a golden colour.

INGREDIENTS

  • 2 brains, boiled and cut into slices, steam cooked
  • 1 egg, beaten
  • Bread crumbs

Ground to Paste, Chutney

  • 3-4 green chillies
  • 1-inch piece ginger
  • 3-4 flakes garlic
  • Handful coriander leaves
  • 1 teaspoon of ground cumin seeds
  • 1 teaspoon of garam masala
  • Handful of mint leaves
  • Lime juice to taste
  • ½ teaspoon sugar
