TOMATO PULAO

Preparation Method :

  • Heat the ghee and fry the onion and ginger till soft.
  • Add the whole spices. Mix well then add the tomatoes and cook till soft. Put in the salt and rice. Stir in a cup water with coconut milk.
  • Add in the rest of the spices. Bring to a boil, reduce heat and cook till the rice is tender and dry. Decorate with fried onion rings and cashewnuts.

INGREDIENTS

  • 500 ml thin coconut milk
  • 200 ml thick coconut milk
  • 300 grams rice, washed, soaked and drained
  • 220 grams tomatoes peeled and diced
  • 50 grams ghee
  • 4 cloves
  • 1 bay leaf
  • 1-inch piece cinnamon stick
  • ½ teaspoon turmeric powder
  • 1 onion, finely sliced
  • 1-inch piece ginger, finely sliced
  • 1 teaspoon peppercorns
  • 1 onion, cut into thin rings, fried
  • Salt to taste
  • 12 fried cashewnuts
