CHORIZO PULAO

Preparation Method :

  • Heat the oil in a thick-bottomed pot and drop in the cardamom, cinnamon, cloves, peppercorns and cumin.
  • When the seeds swell up and begin to change colour, add the onions and cook them until they are golden.
  • Add the chorizo and continue to stir for few more minutes or until the fat in the sausage melts.
  • Add the garlic, ginger and fresh chillies, stir for a minute and add in the drained rice, turmeric and salt.
  • Stir for a minute and add in 2½ - 3 cups of water. Cover and cook for 20-25 minutes or until the rice is done, mix in the coriander leaves and serve hot.

INGREDIENTS

  • 220 grams Chorizo sausages, chopped  
  • 145 grams Chopped onions  
  • 420 grams Basmati rice, rinsed, soaked and drained
  • 50 ml Cooking Oil
  • 25 grams Chopped garlic
  • 2 tablespoon Chopped ginger
  • 1½ teaspoon turmeric powder
  • 6-8 Cardamom pods
  • 1 stick Cinnamon
  • 6-8 Cloves
  • 2 teaspoon Black peppercorns
  • A pinch Cumin seeds
  • 20-22 Fresh chillies
  • Salt to taste
  • 2 teaspoon chopped coriander leaves
