SUNNERI JHEENGA

Preparation Method :

  • Marinate the prawn with ginger / garlic paste, salt and lemon juice. Finely chop galangal, kaffir and lemon rind.
  • Make a marinade with all the rest of the items. Soak the prawns in this fusion marinade.
  • Can be skewered and cooked on coal or in a tandoor.
  • Remove when ready, finish with butter and chat masala.
  • Serve with mint chutney.

INGREDIENTS

  • 450 grams Jumbo Prawns, Wash, de-vein, de-shell the prawn but keep the tail intact
  • 125 grams Hung Yoghurt
  • 1 teaspoon Turmeric powder
  • ½ teaspoon Red chilli powder
  • 1 teaspoon Lemon grass oil
  • 1 teaspoon Kaffir lime
  • 2 teaspoon Galangal (khaa)
  • 1 teaspoon Lemon rind
  • 2 teaspoon Garam Masala
  • 2 tablespoon Ginger/garlic paste
  • 2 teaspoon Butter
  • A pinch Chat masala
  • 1 no Lemon
  • Salt to taste
