RISOTTO WITH PRAWNS

Preparation Method :

  • Risotto : Mix half of the butter with oil and add the onions and fry.
  • Add the rice and mix with the fat, followed by the stock, one ladle at a time.
  • Add in the next ladle when the rice absorb the stock.
  • parmesan cheese and balance butter. Adjust seasoning. Cool the mixture.
  • For the prawn preparation : In a pan fry the fresh prawns with chopped green chillies and homemade tomato sauce.
  • Add it to the Risotto and mix gently.
  • Garnish with cheese and chopped parsley.

INGREDIENTS

  • 225 grams Arborio rice    
  • 50 grams Butter
  • 220 grams Prawns, cleaned and rinsed    
  • 1 tablespoon Olive oil    
  • 1 onion, finely chopped
  • Homemade tomato sauce    
  • 1 Green chilli, finely chopped
  • 100 grams Parmesan cheese, grated    
  • 750 ml Vegetable stock    
  • Salt to taste        
  • Parsley for garnish
