PRAWN PICKLE

Makes :
1 Jar

Preparation Time :

Preparation Method :

  • Mix salt and turmeric and rub into the prawns to marinate. Keep aside for an hour. Grind the ingredients together adding a little vinegar at a time.
  • Heat the oil in a hard bottomed pan on medium flame and stir fry the prawn till golden. Drain on paper towel and allow it to cool.
  • Fry the spice paste with oil, till the oil separates from the masala. Now add the remaining vinegar and cook on medium flame for 15 minutes or more. Allow it to cool.
  • Place the prawn on a glass pickling jar and pour the cool spice mix over it.
  • Mix well and allow it to 'rest' for a few days before using. 

INGREDIENTS

  • 2 kilogram king prawn washed de-veined
  • 100 ml sesame oil
  • 1 liter white wine vinegar
  • 4 dozen dry red chillies
  • 5 teaspoons cumin seeds
  • A thumb size piece of ginger
  • 2 large pod of garlic
  • 1 teaspoon turmeric
  • Salt to taste
