PRAWN IN TAMARIND SAUCE

Preparation Method :

  • Dust prawns with cornflour and annatto oil. Deep fry till golden brown.
  • Saute chopped garlic, tamarind pulp in a pan and add in the stock.
  • Season with light and dark soy sauce, salt pepper and sugar.
  • Toss in the cubed pimentos and prawns. Finish by adding annatto oil.
  • Serve hot garnished with a sprig of chopped coriander.

INGREDIENTS

  • 220 grams King prawns
  • 2 small Onion
  • 45 ml Cooking Oil
  • 2 teaspoons Garlic chopped
  • 2 tablespoons Tamarind pulp
  • 220 grams Cornflour
  • 3 tablespoon Annatto oil
  • 2 tablespoon Light soy sauce
  • 2 teaspoons Dark soy Sauce
  • 1 red Pimento
  • 1 yellow Pimento
  • 1 green Pimento
  • 4 Spring onions
  • 3 tablespoons Stock
  • 1 teaspoon Pepper powder
  • 1 sprig Coriander leaves
  • Cooking Oil for frying
  • 1 teaspoon Sugar  
  • Salt to taste
