LOBSTER THERMIDOR

Preparation Method :

  • Take a litre water, add vinegar and salt, boil it. Put the lobsters in. Cook and then cool. Cut the lobster meat into dice. Clean the shell and keep separate.
  • In a pan add butter and saute the chopped onion and chopped leeks. When sauteed add the diced meat and sauté again.
  • Add some chopped parsley and also some cheese. Mix well.
  • Veloute Sauce: Mix flour, butter, fish stock and seasoning in a pan.
  • Heat the fish veloute in a pan, when hot add mustard cream. Stir it nicely. Cool.
  • Then add yolk of eggs. Finally add in butter little by little.
  • Into the pan of sauteed lobster add 2 - 3 tablespoons of sauce. Mix well.
  • In the lobster shell fill in the sauteed meat. Cover it up with remaining sauce.
  • Sprinkle a little cheese on top. Put it into a salamander grill and bake.

  • 500 grams Fresh lobster
  • 2 teaspoon Vinegar
  • For Fish Veloute
  • 45 grams Cream
  • 1 Parsley, Finely chopped
  • 1 Onion, Finely chopped
  • 225 grams Leek, Finely chopped
  • 75 grams Butter
  • 2 Egg yolks
  • Cheese
