LOBSTER MASALA

Preparation Method :

  • Slit the lobster shell lengthwise from under the head to the tail. Discard the veins and dice the meat and keep aside the shells for later use.
  • Melt the butter in a saucepan and gently cook the spring onions and tomatoes.
  • Add in the chilli and spice paste, add in the diced lobster with half a cup of water.
  • Simmer to low flame and keep stirring for 2-3 minutes, add in the tomato paste and sugar.
  • Add in the chopped coriander leaves and remove it from the heat.
  • Refill the lobster shells with the mixture and serve hot.

INGREDIENTS

  • 750 grams Lobsters, boil till the shell turns a bright pink and drained  
  • 2½ tablespoon Butter
  • 90 grams spring onions, chopped
  • 150 grams Chopped tomatoes
  • ¼ teaspoon white pepper powder
  • 30 grams tomato paste
  • 1 teaspoon Sugar
  • Salt to taste
  • 1 tablespoon Chopped coriander leaves

Ground to Fine Paste

  • 8-10 Dried red chillies
  • 45 ml Vinegar
  • 3-4 pods Green cardamom
  • 2 tablespoon Peeled ginger
  • 4-6 flakes Peeled garlic
  • 3-4 Cinnamon sticks
  • 5-6 Black peppercorns
