LOBSTER IN HOT GARLIC SAUCE

Preparation Method :

  • Marinate the lobster meat with salt, bouillon cube and corn flour.
  • Deep fry the lobster meat till tender. Deep fry the shell till it attains a bright red color. Wash and keep aside.
  • Now heat chilli oil and saute garlic, ginger, celery, onion, chilli paste. Add tomato ketchup.
  • Pour stock and cook the sauce, then add in the fried lobster and toss.
  • Adjust seasoning and consistency with corn flour.
  • Finally add in vinegar and chopped spring onions.
  • Fill lobster shell with cooked lobster meat and serve.

INGREDIENTS

  • 220 grams Lobster meat, de- shelled
  • 150 ml Fish stock
  • 1 tablespoon Tomato ketchup
  • 1 Bouillon cube
  • 2 tablespoon Cornflour
  • ½ teaspoon Ginger, finely chopped
  • 1 teaspoon Garlic, finely chopped
  • 1 teaspoon Onion, finely chopped
  • 1 teaspoon Chilly paste
  • ½ teaspoon Chilli oil
  • ½ teaspoon Celery, finely chopped
  • 1 teaspoon Spring onions, finely chopped
  • 1 tablespoon Vinegar
  • Salt to taste
  • Cooking oil for deep frying
